I have to be honest, I'm not crazy about the thought of eggnog, makes me slightly nauseous actually. But ever since I could drink (legally of course ;) I would taste my mom's Coquito at holiday parties because it was so delish. And when I learned that all the liquor poured into this drink would kill all the raw egg elements I was deathly afraid of, I was convinced that it is nothing like eggnog. But I digress, it is the Bacardi Rum infused version of that stuff, but so much better! It has coconut! And it does my holiday good. ;)
Here is my family's favorite Coquito "Puerto Rican eggnog" recipe and the one we've been using for ages...
1 dozen Egg yolks
14 oz can of condensed milk
(3) 15oz cans of cream of coconut (Coco Lopez)
(2) 12oz cans of Evaporated Milk
1/4 teaspoon salt
1/4 teaspoon of nutmeg
1 LITER of Bacardi Light RUM
Separate the yolks for use, and put the egg whites away for a healthy breakfast.
Blend ingredients for about 2 minutes and then stir in Rum like so (unedited impromptu version):
You can use cinnamon sticks to garnish (if so desired)
